Slow down, fit a metallic needle, loosen the top tension, and let the thread unwind without twisting. Metallic thread breaks more than any other, and every part of that sentence addresses a real cause.
Why it is difficult. Metallic thread is usually a core wrapped in a thin metallic film. The film is abrasive against the needle eye, and the wrapping can unravel under friction. It also has almost no elasticity, so it cannot absorb a snatch.
A metallic needle has an elongated eye and a larger groove, which reduces the rubbing. This is the single most effective change.
Speed is the second. Heat from friction is what destroys the film. Sewing at half your normal speed genuinely works.
Tension is third. Loosen the top tension by half a number or a whole one. Metallic thread cannot take a load an ordinary thread shrugs off.
How it comes off the spool matters unusually much. Metallic thread is normally cross wound and wants to feed off the top of the spool, from a vertical thread stand set behind the machine, so it unwinds without twisting. Twisted metallic thread snags and snaps.

And a fresh needle. Metallic thread blunts needles quickly, and a blunt needle then shreds the next length of thread.
If it still breaks, try a different brand. Metallic threads vary in quality far more than ordinary threads do.

Should I use a stabiliser?
For decorative work, yes. Metallic thread is often used for dense stitching, and dense stitching pulls fabric in whatever the thread.
Can I use metallic thread in the bobbin?
For some effects, sewing from the wrong side, yes. It needs a loosened bobbin tension and it is fiddly. Ordinary bobbin thread is the normal choice.
